Guy’s Spaghetti sauce & Meatballs


















Spaghetti sauce


Salt pork

1 large onion

Celery

Clove garlic


Fry all together then add other ingredients:


Parsley

Red pepper

Salt & pepper

Basil

Garlic salt

18 oz tomato paste

28 oz can tomatoes canned

1 28 oz can purée


Meatballs


1 lb ground beef

1 lb ground pork 

Salt and pepper

2 eggs

1/2 cup Romano cheese 

2 clove garlic

1 tablespoon Basil

1 tablespoon Parsley

1 stalk Celery

Green pepper

1 3/4 cups Bread crumbs

Salt Pork


Preheat the oven to 400 degrees

Mix all ingredients and season with salt and pepper

Heat salt pork in sauce pan over medium high.

Roll mixture into 1 1/2 inch balls and fry until golden brown but not cooked through (remove with slotted spoon to a plate lined with paper towels)


Line sheet pans with parchment paper.


Bake for 20 minutes

  What You Need: 2 lbs. ground meat 3 cups uncooked long grain white rice(used uncle ben's)  4 tbsp. Creole Seasoning (used Zatarain's) 1 1/2 tbsp. of Zatarain's Dehydrated Sweet Bell Peppers 2 tbsp. minced Onion (used McCormick's) 1 tbsp. minced garlic 2 tbsp. soy sauce 6 1/2 cups water 2 tbsp. of butter  *dash of paprika on top for taste Directions: Brown ground beef in large skillet on medium-high heat, make sure you ground it up in very small pieces, then drain and set aside. In a large saucepan bring water to a boil add all the seasonings and butter stir until mixed. Then add the meat and rice; return to a boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving. Dash with paprika and enjoy! *Cooking Note: You could use fresh peppers and onion. This make's 8-12, 1 cup servings. 

Peach pie supreme

3/4 cup all-purpose flour 1/2 teaspoon salt 1 teaspoon baking powder 1 (3 ounce) package non-instant vanilla pudding mix 3 tablespoons butter, softened 1 egg 1/2 cup milk 1 (29 ounce) can sliced peaches, drained and syrup reserved 1 (8 ounce) package cream cheese, softened 1/2 cup white sugar 1 tablespoon white sugar 1 teaspoon ground cinnamon Preheat oven 350 degrees  Grease sides and bottom of 10 inch deep-dish pie pan In a medium bowl, mix flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour into pie pan and arrange peach slices on top of the pudding mixture. In a small bowl, beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tablespoons reserved peach syrup. Beat 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top. Bake in preheated oven for 30 to 35 minutes, until golden brown. Chill before serving.
